Eating clean is a spiritual journey. I have made a conscious effort to embrace eating to live – benefits range from improving cognitive functions, digestive systems, increasing energy and weight loss. My morning water intake ritual is a game changer. Body cleansing should be on-going and top of mind. Let me tell you about the Green Goddess soup. Cousin Pete introduced me to his version of the soup in 2019. We were celebrating his sister’s 50th birthday and the conversation shifted to him feeling 20 years younger. I was intrigued and dug deeper as to why.  Pete loves his results of having a strong sense of being, blood flow and increasing levels of energy. As he walked me through the cooking process and ingredients, I began to visualize my own version.

The soup base contains, water, herbs and vegetables. Here are my steps to creating my version of the Green Goddess soup: 1) Grab your slow cooker, add 3 cups of water and/or butternut squash broth, seaweed, lintel beans, chickpeas and slices of onions. 2) Next, add oregano, basil, sea salt and cayenne pepper and allow the base to cook for 3 to 4 hours. 3) Then, add veggies and water if needed. 4) Allow that to cook for 2 to 3 hours. Finally, you are ready to serve. Play with the seasoning levels throughout the cooking process – some like it hot! Due to Covid-19, this meal is a staple in my home. Special requests from my barber, close friends, workout mates and family members are encouraging. It encourages me to explore and learn more about nutrition. For all you meat lovers, rice and meat are ways that people have stretched this meal out.
